We have a series of Cast Iron Commandments that guide our view of family cooking. Spirit guiders, like Commandment #1 – Challenge yourself , all the way to practical tips such as Commandment #18 – Re-season yearly by baking the skillet at 450 for an hour coated with vegetable oil. The Commandments are the tentpoles of how to be competent using the tools and thoroughly enjoy cast iron cooking.
This Upside Down Skillet Pizza recipe is courtesy of my sister in-law Emily C, an early convert to the cast iron way of life, and inspired Commandment #15 – Share recipes with friends that they may not find themselves. I default to the stove top, but this recommendation is for the grill and most enjoyable. By flipping the skillet upside down, you create a crisp pizza crust with a hot cooking surface, and get a flexible dish for any group.

A new favorite in my house, take it as a reminder to let somebody else cook once in a while. “A good listener is not only popular everywhere, but after a while, he gets to know something”.
