They say in life that it’s important not to have too much of a good thing. Maintain balance in all phases, and don’t overemphasize one area over another for too long. Well, while I can understand that logic, the best things in life often require someone to go all-in. Marriage, parenting, health, family. All of the important things require full on commitment to the cause, for better or worse.
This Gameday Skillet Queso is as an example of abandoning any notion of balance and going all in to support the dairy farmers of America. With damn near a pound of of shredded cheese, a cup of whole milk and some diced sausage, just apply a little bit of heat to reap the rewards of this full hearted commitment. Abandon any notion of restraint for a little while to share the dish with your friends and family while watching football in the fall.
Ditch the charcutier board, go all in on melted cheese instead, and be reminded of the rewards for tilting life out of balance.

Cookware: 10.5 Cast Iron Skillet
Y’all, I trust this skillet more than I trust my car. If the house were burning down, I would grab all my loved ones, then the wedding photos, and then come back and find this skillet and then my class ring. I can’t exaggerate how often I use this, how many different types of dishes I make with it, how it’s seen me through the lows and the highs of adulthood. I’ve been cooking with this skillet since before my kid was born and she’s got a miniature version of her own. I trust people more when I know they have a cast iron skillet.
This skillet won’t cook everything for you (soups, chilis, etc), but it will open the door to all of your cooking possibilities. Just get one and embrace the cast iron way of life.
HOLD MY BEER – PREPARATION
Using a cheese grater, shred the Cheddar and Pepper Jack cheeses into individual bowls to get the right quantities for the recipe. I always support using the most thorough form of food preparation for the most important ingredients in a recipe. In this case, grating the cheese on the same day will help to ensure your final product is full of flavor.
Once complete, set the cheese aside. Remove the casing from the chorizo and dice into pieces. If you have a meat grinder, you can also grind the chorizo on a medium setting.
Slice the jalapeno and set aside. Cut up the cilantro and set aside for later.
Crack open that first beer.

LIGHT THIS CANDLE- START COOKIN’
Place the skillet on the stove, pour in 1TBS of olive oil, and turn the heat up to 5. Once the oil spreads, put the chorizo in and cook until browned, 5-7 minutes. Stir throughout, and then drain the grease using a slotted spoon.

Next, place the cream cheese in the skillet, then the shredded cheddar and pepper jack cheese in. Stir to combine.


Pour in the cup of whole milk. Reduce the stovetop to 3 or 4 and stir until the ingredients melt into a thick, cheesy combination.


Pour in the whole can of diced tomatoes and stir throughout.

Finally, garnish with the cilantro, jalapenos, and chips. Serve straight out of the skillet. Impress your friends, fans of your team, fans of the other team, and other home chefs. Enjoy responsibly.


GAMEDAY SKILLET QUESO
Serves 8-10 Prep Time: 20 Minutes Cook Time: 20 minutes
- Grate the cheddar and pepper jack cheese into separate bowls.
- Remove the casing from the chorizo and dice into pieces.
- Slice the jalapeno and set aside. Cut up the cilantro and set aside for later.
- Place the chorizo in and cook until browned. Drain the grease by using a slotted spoon or paper towels.
- Place the cream cheese in the skillet and stir.
- Place the cheddar and pepper jack cheese in and stir to combine throughout.
- Pour in the cup of whole milk. Reduce the stovetop to 3 or 4 and stir until the ingredients combine into a thick, cheesy combination.
- Pour in the whole can of diced tomatoes and stir.
- Garnish with the the cilantro and jalapeno.
- Set out a bowl of chips beside and serve straight out of the skillet.
- Impress your friends, fans of your team, fans of the other team, and your neighbors.
